Orange - Sojjappalu

This is my second dish contributed to AFAM - Orange for the month of June. After a lot of thought I came up with this recipe. Generally sojjappalu are deep fried in oil or ghee. I opted to shallow fry it like puran poli (bobbatlu) as it will consume very less oil. Hope you guys will like it. Trust me you will definetely taste the orange flavour in this.

Ingredients:

For Dough:

1 cup All purpose flour
1 tsp baking powder
1 1/2 tsp orange extract
1/2 tsp vanilla extract
1 tsp salt
1 tbsp ghee

For stuffing: ( Kesari )

1/2 cup bombay rava
1/2 cup sugar
1/4 cup orange juice
1/2 cup water
1 tbsp ghee
1 tsp cardamom powder
1. Combine all the dry ingredients along with ghee. Mix all of them with enough warm water ( about 1/3 cup) and make a pliable dough. Cover and let it rest for an hour.

2. Heat ghee in a pan and fry the bombay rava for about 2 min. or until you get good aroma. Add sugar and cardamom powder to this rava. Mix for about 2 min. or until the sugar starts melting. Add the Orange juice, water and cook until a thick paste (Kesari) forms (See the above picture).

3. Divide the dough and kesari into 6 small balls. Take one small ball and roll it into a small puri.
Place one kesari ball in the middle of this puri and cover. Roll it back into a 4" diameter puri.

4. Shallow fry it in a pan with some non-stick spray. (Generally sojjappalu are deep fried, if you want you may also do that).

5. Stack them seperating with parchment paper. Enjoy.....
