Instant Gutti Vankaya

This is one of the recipes that I learned from my mother-in-law. Now a days it has become important to have a set of such recipes in our menu to meet our busy life schedule. This I improvised a little bit to use as less oil as possible. So lets get cooking:

2 long chinese eggplants
1/2 cup of gram flour
1 tsp salt or as per taste
1 tsp red chilli powder
a pinch of turmeric powder
2 tsp of oil
Non stick cooking spray.

1. Combine all the dry ingredients in a bowl with 2 tsp of oil and little bit of water to bring all together.
2. Wash and clean the eggplants. Cut them into 4 pieces and slit them length wise. Stuff the above made stuffing into these eggplants. (See the picture).
3. Heat a pan and spray a second non stick cooking spray. Arrange these eggplants in the pan.

4. Cover and cook on low-medium heat until the eggplant becomes tender. If necessary you may sprinkle little of water over the eggplants.

Serve this curry with hot rice.
